Fried Calamari



















Lately I have had such a craving for fried calamari that I went on a downtown mission to find fresh calamari. I looked through many fried calamari recipes and finally created my own recipe. I did not include a marinara sauce but have included a link to Emeril Lagasse's marinara sauce.


















Ingredients:
1 pound (16 oz) fresh or frozen squid rings
2 eggs
1/2 cup buttermilk
1 cup flour (I use 100% whole wheat flour)
Vegetable oil for frying (I use refined canola oil)
salt and pepper for seasoning
lemon juice of 1 to 2 lemons

Beat the eggs and mix together with the buttermilk in a bowl. Add the salt and pepper. Soak the calamari in the buttermilk mixture for about 20 minutes. Fill a large pan no more than half way with oil and heat to 375* F. Put the flour in a bowl. Remove the calamari from the buttermilk mixture and toss in the flour and coat it completely. Carefully add the calamari in batches (do not overcrowd the pan) to the hot oil and fry until the coating is crisp and golden. Remove the calamari to paper towels to drain and season with more salt and pepper and squeeze some lemon juice over the calamari.

I love lots and lots of lemon juice!

Serve it with a fresh green salad and vegetables.

  5. Fried calamari is one of my favorite all time appetizers. For some reason, I'm afraid of making them at home. Isn't that silly? Once I get over my fear, I'll have to try this recipe.

    (May it be that there are some Mediterranean in your Family-History?)

    Fried Calamari.......my "three men" would walk miles for them....; and this under the burning sun..!!!!

    Cara Ingrid, you did a gorgeous demonstration and the last photography just invites so lovely to sit to the table and enjoy! Wonderful!!!

    Tuscans love fried seafood; precicely the way how you prepared the Calamari; the Ladies visit early in the morning the fishermarket and choose the fish freshly;( a real spectacle!!)

    Thank you....thank you!!! Yes, our ancestors are from France, UK and Holland....so somewhere there must be some Mediterranean roots! I would love to visit an Italian fish market one day and do it like the Tuscans do it! We watch documentary films of traveling in Europe and I must say...you are right....it looks like a real spectacle! I assume you visit the fish market as well..right??

    I have to re-respond on your lovely answer: oh; I am certain the France-roots have been close to the Mediterranean sea........!

    You know; I do not have to go down to the port where the fisher-market takes place....!
    A lovely Fisher-Lady comes up to our little village on the hill; just 10 min. drive from the sea.....and carries in a special "Fish-Car" the best, freshest seafood into the "market place" of the tiny village....and I take the bike from our home and pedal 8 min. down to the village...and Dinner will be certainly fresh grilled Fish!
